and useful overview of the milling process from grain to flour including wheat
selection, grain cleaning, grain conditioning, the gradual reduction system,
quality measurements at various steps in the process. Factors influencing the
production process in terms of economics and product quality will be discussed.
The course will provide a better understanding of what is being accomplished in

Advanced Flour Milling Course
A brief overview of the
milling process from grain to flour followed by and intensive focus on grain
conditioning, the gradual reduction system, and quality measurements at various
steps in the process will be presented. Factors influencing the milling process
will be studied in the milling laboratory including test weight, tempering
conditions, kernel size, wheat class, kernel hardness, roll corrugations and
differential, sifting properties. Emphasis will be placed on analytical
evaluation and impact of factors influencing the milling process including
development and analysis of granulation profiles and cumulative ash curves.
Process control and quality control concepts will be presented. This course will
provide a better understanding of what is being accomplished in the milling
process and enhance trouble-shooting skills of mill personnel.

Durum Wheat Milling Course
This
course will familiarize participants with durum wheat and provide a
technical overview of durum milling. Differences between bread wheat and
durum wheat milling are emphasized. Purification is covered in-depth
because of its importance in semolina production. Subject matter meets
the needs of newcomers to the durum industry as well as those with years
of other types of milling experience. A tour of a durum mill and pasta
plant is included. The intent is to increase the miller's insight into
milling
performance
and semolina quality. This course is co-sponsored by the International
Association of Operative Millers (IAOM) and the Northern Crops Institute
(NCI). The course is held in June at the NCI in Fargo,
North Dakota USA.
